Pull-through sharpeners
A pull-through has fixed sharpening elements set at an angle. You draw the blade through a few times and the angle takes care of itself. It is the easiest sharpener to use well, and the one to keep in the truck or the pack. AccuSharp's original pull-through, the Sharp-N-Easy 2-Step and the Diamond Pro 2-Step all work this way. Two-step models give you a coarse slot to reset the edge and a fine slot to finish it.
Whetstones and stone kits
Stones take more practice and reward it with a sharper, cleaner edge. You hold the angle yourself, start on a coarse stone and finish on a fine one. The AccuSharp Arkansas whetstone is the traditional choice. The 3-stone and 5-stone precision kits and the tri-stone give you a range of grits in one package for a full reset at home.
Rolling sharpeners
AccuSharp's 2-stone and 4-stone rolling sharpeners hold the knife at a set angle while you roll the stones along the edge. They split the difference: more control than a pull-through, less skill than a freehand stone.

Arkansas stones are traditionally used with honing oil. Follow the instructions that come with your stone.
Can I avoid sharpening altogether?
Yes, with a replaceable blade knife. Swap in a fresh blade when it dulls.
